Pulled Chicken

Everyone knows pulled pork, but did you know that you can also make pulled chicken from chicken? You can use this in various dishes such as burgers or empanadas.
Delicious!

- 1kg chicken legs or chicken thighs
- Your favorite BBQ rub
- Your favorite BBQ sauce
- Smokewood

Preparation method

1. Prepare a BBQ for indirect smoking at about 180°C. You do this with a kamado by using a plate setter, a full explanation can be found here. With a bullet BBQ you put your coal along 1 side of your BBQ.
In the meantime, season your chicken with the rub and let it rest for a while.

2. Put smoking wood on the coals. You can also make a smoke bomb for this. You can make a smoke bomb by wrapping your wood chips in aluminum foil and poking a number of holes in it. This way the chips do not burn up immediately and you have longer smoke.

3. Let the chicken smoke for about 60 minutes at a temperature of about 175°C.

4. When the chicken has a core temperature of 78°C it is well done.
Let the chicken cool down for half an hour so you don't burn your hands.

5. Pull the meat apart, it is most convenient to pull the chicken apart on a shelf and use the packaging as a waste bin. Flatten the meat with your bare hands and remove anything you don't trust.
To get the meat a bit finer, you can press it through your fingers.

6. You can use the pulled chicken immediately in a sandwich or freeze it for later.
